So every month, we are going to include one of your server/bartender’s favorite recipes…
The first one is from Andrea… for those of you that don’t know, she is a fabulous cook! We know this, because she often cooks too much of whatever she is cooking, and delightedly brings her always eager co-servers some to try!!!
So here you go:
Andrea’s delicious SCALLOP SAUTEE
1 pound of Sea Scallops
1 can Artichoke Hearts (drained)
2 Roma Tomatoes (chopped)
2 Tsp Basil Pesto
1 Tbsp Minced Garlic
1 bag of Baby Spinach
1 cup of Moscato Wine
Saute pesto, garlic, scallions, tomatoes and wine in a large skillet. Simmer over medium heat for about 10 minutes. Add spinach and scallops, simmer til scallops are done – only a couple of minutes…. serve over angel hair pasta, with garlic bread
